Streusel Layered Coffeecake

Ingredients

  • Batter:
  • 1 1/2 cups sifted all purpose flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 3/4 sugar
  • 1/3 cup butter or margarine, melted
  • 1/2 cup milk
  • 1 tsp. vanilla
  • chopped apples
  • dried cranberries
  • Streusel:
  • 1/2 cup light brown sugar, firmly packed
  • 2 Tbsp. soft butter or margarine
  • 2 Tbsp. all purpose flour
  • 1 tsp. cinnamon

Preparation

Step 1

Preheat oven to 375°.
Grease an round cake pan.
Make batter by sifting flour with baking powder and salt; set aside.
In medium bowl, with rotary beater, beat egg until frothy; then beat in sugar and butter until well combined. A
Add milk and vanilla.
With wooden spoon, beat in flour mixture until well combined.
Gently add in apple pieces and cranberries.
Combine all the streusel toppings in a small bowl.
Pour half the batter into the prepared pan.
Cover with half the streusel topping over the batter.
Continue with the remaining batter and topping.
Bake 25 to 30 minutes or until done.
Cool partially in pan before cutting.
