Mac & Cheese with Bacon & Brussels Sprouts
Taste of the South Recipe
- 1 lb Brussels sprouts, stemmed & cut in half
- 1 T EVOO
- 6 slices bacon, cut into 1/2 in pieces
- 1/2 c diced yellow onion
- 2 cloves garlic, minced
- 1/4 c all purpose flour
- 2 1/2 c whole milk
- 2 t kosher salt
- 1 t Dijon mustard
- 1/4 t crushed red pepper
- 1 c grated Parmesan cheese
- 1 c shredded sharp white cheddar cheese
- 8 ozs rotini pasta, cooked
Preheat oven to 425. Line a rimmed baking sheet with parchment paper. Place Brussels sprouts on prepared pan. Drizzle with EVOO tossing to coat.
Bake until Brussels sprouts begin to carmelize, about 15 min. Set aside.
In Lg skillet, cook bacon over med heat until crisp, approx. 8 min. Using a slotted spoon, set bacon aside reserving 4 T rendered fat in pan. Add onion & garlic. Cook stirring frequently until softened, approx. 3 min. Add flour; cook, whisking constantly, 1 min. Whisk in milk. Cook whisking constantly until mixture mthickens, approx 5 min. Stir in salt, mustard & red pepper. Remove from heat.
Stir in cheeses until melted. Stir in cooked pasta, Brussels sprouts & bacon.
