Broccoli Soup

Ingredients

  • 2 T butter or oleo
  • 1/4 C chopped onion
  • 3/4 C chopped celery
  • 2 – 10oz. packages frozen chopped broccoli, thawed enough to separate
  • 2 C chicken broth
  • 1 C milk
  • Salt & pepper to taste

Preparation

Step 1

In a medium saucepan heat the oleo; add onion and celery. Cook gently until wilted. Add the broccoli and broth. Bring to a boil. Cover and simmer until broccoli is tender, about 5 minutes. Puree in 2 batches in a blender.
In a saucepan stir together the broccoli puree, milk, salt and pepper. Heat and eat. If you like it thinner add a little more milk or chicken broth. Delicious! It’s a pretty green color too.
