Ingredients
- 1 cup sliced mushrooms
- 4-8 small shallots or onions, sliced
- 1/3 cup butter or oil
- 5 slices bacon or fat pork
- 1 young chicken, cut in pieces
- 1 clove garlic, crushed
- 1/4 cup all-purpose flour
- 2 1/2 cups red wine OR
- 1 1/4 cups chicken stock and 1 1/4 cups red wine
Preparation
Step 1
Sauté onions and mushrooms in butter or oil in heavy pan until golden. Remove from pan. Fry bacon or prk in pan until cooked, but not crisp. Remove from pan. Add chicken pieces, cook 10 minutes, turning to brown them. Remove from pan. Cook garlic and flour in pan with butter or oil for 3-4 minutes. Gradually add wine and/or stock, stirring constantly, until a smooth sauce is obtained. Return all other ingredients to pan, season with salt and pepper and simmer for 30-40 minutes.
