Eastern European Pear, Pecan, and Feta Salad

Ingredients

  • 1 head romaine lettuce
  • 2 medium "firm ripe" pears, diced
  • 150 g feta cheese, cubed or crumbled
  • 1/2 small red onion, diced
  • 1/2 - 3/4 cup toasted pecans**
  • 1/4 cup lime juice
  • 1/4 cup liquid honey
  • 1 to 2 cloves garlic, crushed
  • 1/2 tsp Dijon mustard
  • 1/4 cup olive oil or vegetable oil

Preparation

Step 1

Wash lettuce; tear into bite sized pieces in large bowl. Add pears, cheese, onion, and pecans. Just before serving, toss with dressing. Blend lime juice, honey, garlic, mustard, and oil together to make dressing (Makes enough dressing for 2 salads).

**To toast pecans, spread over bottom of foil pie plate and bake 5-10 minutes in 350°F oven, watching carefully so they do not burn; they should smell "toasted" and be slightly darker when ready.
