Kahlua Coffee Bites

Ingredients

  • 2/3 cup coconut flour
  • 1/2 cup cashew meal/flour
  • 1/2 cup unsweetened dark cocoa powder
  • 1/4 teaspoon sea salt
  • 1/4 cup creamy cashew butter
  • 1/4 cup maple syrup
  • 1.5 ounces dark chocolate, melted
  • 2 tablespoons Kahlua
  • 2 tablespoons strongly brewed coffee
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon coffee extract
  • coconut sugar for rolling

Preparation

Step 1

Whisk together the coconut flour, cashew meal, cocoa powder and sea salt in a large bowl.

Add the remaining ingredients (except the coconut sugar) and mix until well combined with a spatula.

Roll the mixture into balls in the palms of your hands and place on a parchment lined baking sheet.

Remove from freezer, pour coconut sugar into a small bowl and roll the balls in the coconut sugar to coat.

Store in freezer or fridge
