Ingredients
- 2 pounds mushrooms
- 2 (10 oz.) pkgs. frozen spinach, thawed, drained, and squeezed dry
- 16 oz. Italian sausage (removed from casing), cooked, drained & crumbled
- 1/2 cup grated Parmesan cheese
- 1 teasp. olive oil
- 3 Tablespoons Italian-style breadcrumbs
- 3 Tablespoons melted butter
Preparation
Step 1
Preheat oven to 350 degrees. Remove stems from the mushrooms and place caps upside down in 2 greased 9 x 13 baking dishes. Combine spinach, sausage, Parmesan and olive oil.
Stuff sausage mixture into mushroom caps and drizzle with melted butter. Bake for 30 minutes, or until brown and bubbly. Makes 10-12 servings.
