Chicken and Green Pea Casserole

  • 3 Tbsp margarine
  • 1/4 tsp salt
  • 2 tsp soya sauce
  • 1 1/2 tsp paprika
  • 1/2 tsp crushed rosemary leaves
  • 8 chicken thighs on legs
  • 1 can mushrooms, drained, liquid reserved
  • 1 pkg (10 oz) frozen green peas
  • Hot cooked rice

Preparation

Step 1

Melt margarine in 2 qt. casserole dish in oven. Add next 4 ingredients and mix with margarine. Roll chicken pieces in margarine mixture and arrange skin side up in casserole. Sprinkle with mushrooms. Add enough water to mushroom liquid to measure 1/2 cup. Pour over chicken, cover with foil or lid and bake 50 minutes at 350°. Uncover and add peas, bake 10 minutes longer or until chicken is done. Serve over rice.
