Rice Pilaf

Ingredients

  • 2 tbls butter
  • 1/2 yellow onion
  • 1 c long grain rice
  • 1 c water
  • 1 c chicken broth
  • salt
  • 2 tbls sliced scallions

Preparation

Step 1

melt butter over medium heat. Add onion and cook until soft. Add rice and cook, stirring until nutty aroma. Add water, chicken broth and salt and bring to a boil. Cover the pan. Transfer to oven and bake until rice is tender or liquid is absorbed. (approx. 25-30 minutes)
