Tempura Vegetables
Fried onion rings are much loved, of course, but other veggies dipped in batter and quickly fried can be even better. What a great way to introduce a variety of fresh vegetables to your family.

Ingredients
- Oil for deep frying
- 1 1/2 cups all purpose flour
- 2 tbsp sesame seeds
- 1 tsp salt
- 1 (12 oz) bottle beer
- 1 small slender sweet potato
- 1 small zucchini
- 12 medium white mushrooms
- 2 cups cauliflower florets
- Coarse salt
Preparation
Step 1
1. In an electric deep fryer, or 6-qt saucepot, heat 2 inches of oil to 400ºF. Set wire rack over baking sheet lined with paper towel. Preheat oven to 200ºF; set baking sheet and rack in oven.
2. Peel and cut sweet potatoes into 1/4 inch round. Cut zucchini into strips 3 x 1/2 inches. In medium bowl, mix together flour, sesame seeds, salt and beer.
3. Coat enough sweet potatoes with batter to fill, but not crowd, fryer or saucepan; fry until golden brown about 3 minutes, turning once. Remove with slotted spoon to wire rack.
4. Let oil return to 375ºF. With slotted spoon, remove and discard stray bits of batter from oil. Continue coating and frying remainder of vegetables, removing each batch to wire rack in oven.
5. Place all vegetables on platter; season with coarse salt and serve immediately.
6. For Asian Dipping Sauce, mix 3 tbsp reduced-sodium soy sauce, 1 tbsp lime juice and 1 tsp sugar in a small bowl to serve as a dipping sauce for these tender crisp vegetables.
