Harvest Meatloaf

Ingredients
- 2 lbs ground bison (or other meat)
- 1/2 cup chopped onion
- 3 chopped shallots
- 1/2 cup celery cut into 1/4-inch cubes
- 1/2 cup carrots cut into 1/4-inch cubes
- 3/4 cup chopped flat-leaf parsley
- 1/2 cup fresh breadcrumbs
- 2 tbsp vegetable oil
- 2 cloves of garlic, minced
- 2 tbsp ketchup
- 1 1/2 tsp salt
- 1 tsp ground black pepper
- 1 tbsp Worcestershire sauce
- 1 large egg
Preparation
Step 1
Saute onion, shallots, celery, carrots and garlic in vegetable oil until soft.
Transfer to large bowl, stir in breadcrumbs, parsley, ketchup, Worcestershire sauce, salt and pepper. Lightly toss with ground buffalo until just barely mixed. Put in an 8 x 4 1/2-inch loaf pan. Coat top with 2 tbsp ketchup if you want a sweet crust. Bake at 370 F for 1 hour or until a thermometer inserted into the center registers 160 F.
Let meatloaf stand for 20 minutes before slicing and serving.
