CREAMY****Avocado Vinaigrette

Ingredients

  • 4 tablespoons of vinegar (I used champagne, recipe called for white balsamic vinegar)
  • 1 cup of fresh parsley
  • 1 pitted and peeled avocado
  • 1/4 cup of extra virgin olive oil
  • 6 tablespoons of water (or more as needed for consistency)
  • 1 clove of garlic
  • juice and zest of 1 lemon or lime
  • 2 tablespoons chives, green onions or shallots
  • Salt and pepper to taste

Preparation

Step 1

Add ingredients to food processor and blend until smooth.
