Mexi-Chili Casserole

Ingredients

  • 1 # ground beef
  • 1 # can kidney beans or black beans
  • 1 can Old ElPaso Enchilada sauce, mild
  • 1 80z can tomato sauce
  • 1 can whole kernel corn
  • 1 can sliced black olives
  • 1 tbs minced onion
  • 1 small pico de gallo, Fresh in produce

  • 2 c shredded mexican cheese
  • 2 c fritos corn chips
  • 1 1/2 c sour cream

Preparation

Step 1

Brown meat, drain. Rinse beans. Combine beans,corn,olives, enchalada sauce,tomato sauce, onion, and pico de gallo. Add 1 1/2 c cheese, corn chips, and meat. Pour intp 9x13 baking dish. Bake uncovered 20-25 minutes at 375*. Spread w/ sour cream and 1/2 c cheese. Bake 5 more minutes
