Curry Pasta Salad

I created this one afternoon when I was craving a curried pasta salad that I had eaten at a deli. Healthy, delicious, and quick to make.

Ingredients
- 1 cup plain vegan yogurt
- 2 Tbsp curry powder
- 2 Tbsp agave or maple syrup
- 2 Tbsp vegan mayonnaise
- 2 dashes cinnamon
- 1/4 cup cilantro, chopped
- 1/4 cup mint, chopped
- 1/2 cup golden raisins
- 4 green onions chopped
- walnuts
- cooked pasta
Preparation
Step 1
In a large bowl mix everything except for the pasta, taste and adjust seasonings adding salt and pepper if desired. Toss with cooled pasta.
A nice addition is chickpeas or rinsed, soaked and drained jackfruit
Slivered almonds or pecans make a great substitute for the walnuts.
