- 6 ears sweet corn 1/4 cup water
- 1 red bell pepper, chopped 1 yellow bell pepper, chopped
- 1 red onion, minced 1/2 cup cilantro, chopped
- 1/4 cup lime juice 1/4 cup olive oil
- Salt & pepper, to taste

Preparation
Step 1
Cut the fresh corn off the cobs and steam for 3 – 5 minutes in water in covered saucepan. Remove lid & cook, stirring, for 2 more minutes until water evaporates.
Toss corn with other ingredients and chill.
