Pork à la Marmalade with Mozzarella

The ham can be replaced with prosciutto.
Cheese alternatives: Provolone, Cheddar or Gouda.
Ingredients
- 2 lb (900 g) pork tenderloin
- 4 oz (120 g) Mozzarella, sliced
- 2 tbsp (30 mL) Dijon mustard
- 2 tbsp (30 mL) orange marmalade
- 2 tsp (10 mL) fresh rosemary, chopped
- Freshly ground pepper, to taste
- 4 large slices of ham

Step 1
Barbecue method:
Preheat grill to medium heat.
Make a lengthwise cut in each tenderloin, without cutting all the way through, and open like a book. Place Mozzarella cheese on each tenderloin, then close up.
In a bowl, mix the mustard, marmalade, rosemary and pepper. Brush tenderloin with this mustard mixture.
Cover with ham slices so cheese is secured inside. Hold together with toothpicks. Cook on grill for 12–15 minutes, turning over frequently.
Serve with vegetables and grilled orange quarters.
Oven method:
Preheat the oven to 425 °F (220 °C).
Place the prepared pork tenderloins in an oven-safe dish and cook for about 15 minutes, depending on the thickness of the pork and the desired do.
