Ingredients

  • Marinade:
  • 1 to 1/2 pounds fresh salmon fillets or steaks, cut into 4 pieces (or 1 piece per person)
  • 1 teaspoon sesame oil
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons brown sugar
  • 1/4 cup Chinese rice wine or dry sherry
  • 2 cloves garlic, finely minced
  • 2 teaspoons fresh ginger, finely minced
  • Glaze and Garnish:
  • 1/2 cup teriyaki sauce
  • 1/4 cup minced fresh green onions
  • 1 teaspoon toasted sesame seeds

Step 1

Combine all of the marinade ingredients in a small bowl or ziploc bag. Add the salmon and marinate for 10 to 15 minutes, turning once or twice. Drain, discard the marinade.

Heat a skillet to medium-high. Spray with a non-stick cooking spray or add one tablespoon of cooking oil. Add the salmon pieces, making sure not to crowd the pan. Cook the salmon 7 to 10 minutes per inch of thickness, turning once. When done, salmon will be beautifully seared and glazed on the outside. Avoid over cooking or the fish will be dry.

Remove salmon to plate or serving platter. Add teriyaki sauce, green onions and sesame seeds to pan, cook about 3 minutes until sauce thickens and pour over salmon.
