Broccoli, Grape & Pasta Salad

Ingredients

  • 1 c chopped pecans
  • 1/2 (16 oz) pkg farfalle (bow tie) pasta
  • 1 lb fresh broccoli
  • 1 c mayo
  • 1/3 c sugar
  • 1/3 c diced red onion
  • 1/3 c red wine vinegar
  • 1 t salt
  • 2 c seedless red grapes, halved
  • 8 cooked bacon slices, crumbled

Preparation

Step 1

Preheat oven to 350. Bake pecans in single layer in shallow pan 5-7 min. until lightly toasted & fragrant stirring halfway through.

Prepare pasta according to pkg directions.

Cut broccoli florets from stems & separate florets into sm pieces using tip of paring knife. Peel away tough outer layer of stems & finely chop them.

Whisk together mayo & next 4 ingredients in Lg bowl; add broccoli, hot cooked pasta & grapes. Stir to coat. Cover & chill 3 hrs. Stir bacon & pecans into salad just before serving.
