Ingredients
- 2 sticks unsalted butter, divided
- 1/3 cup pineapple juice
- 3 20-ounce cans of pineapple chunks in juice, drained
- 1 yellow cake mix
- 2 cups sweetened coconut flakes
Preparation
Step 1
Preheat oven to 350.
Melt one stick of butter in 9 x 13 pan in oven for five minutes.
Stir juice (or rum) and pineapple into pan. Cover with the cake mix.
Cover this with coconut.
Cut the other stick of butter into cubes and place over coconut.
Bake for 45-60 minutes, rotating cake every 15 minutes for even toasting. If the coconut gets brown too quickly, cover with foil and continue baking.
