Peanut Butter and Coffee Curry

Ingredients

  • 1 cup green peas
  • 1 cup cubed firm tofu
  • 1/4 cup peanut butter
  • 1/2 cup strong coffee
  • 1 cup chopped onions
  • 2-4 cloves garlic
  • 1/2 tsp cumin
  • 1 tsp curry powder
  • 1/4 tsp cardamom
  • 2 Tbsp molasses
  • 1 cup almond milk
  • cooked basmati rice

Preparation

Step 1

Saute onions and garlic in water till browned. Add remaining ingredients, except peas. Mix and simmer 1 hour stirring occasionally. Stir in peas serve over basmati and season with salt or soy sauce to taste. Even better the next day.
