Ingredients
- frozen rock-lobster tails, thawed
- melted butter
Preparation
Step 1
1. Preheat broiler. With kitchen shears, cut away thin underside shell of each tail. Insert skewer lengthwise through meat to prevent curling. Place, shell side up, on pan.
2. Broil 7 to 9 inches from source of heat according to directions below, turning once. Baste occasionally with melted butter. Tails are done when meat is opaque; remove skewer. Serve in shell, with small dishes of melted butter.
2-3 lb. tail = 3-4 minutes for shell; 2-3 minutes for meat
4-5 lb. tail = 5 minutes for shell; 3-4 minutes for meat
6-8 lb. tail = 5 minutes for shell; 6-8 minutes for meat
