Italian Almonds

Ingredients

  • 4 cups almonds
  • 3 ripe tomatoes, coarse dice
  • 1 shallot , coarse dice
  • 1/2 cup sundried tomatoes (soaked in water)
  • 2 tsp fresh oregano (finely chopped)
  • 2 tsp fresh basil (finely chopped)
  • 2 tsp balsamic vinigar
  • 1 tsp sugar
  • salt

Preparation

Step 1

1) soak nuts for 6+ hours, rince & drain
2) in a food processor, combine all the ingredients and process into a smooth sauce
3) in a mixing bowl, pour the tomato sauce and fold-in the almonds
4) spread evenly on a dehydrator sheet and dehydrate for 8 - 10 hours
