  • 2 T salt
  • 1 lb green beans , trimmed
  • 1 15 oz cannelini beans, rinsed and drained
  • 1 can chick peas, rinsed and drained
  • 1/3 c coarsely chopped mint
  • 1/4 c red wine vinegar
  • 1/4 c sprkling water
  • 1/2 c EVOO
  • pepper



Step 1

Cook green beans till tender. Combine beans in large bowl with mint.
Whisk together vinegar, oil and water. Pour half of mixture over beans. Toss again. let stand one hour to enhance flavors.
