Ingredients
- 3 c. milk
- 2 c. sugar
- 3 T. cornstarch
- 4 eggs, separated
- 2 T. sugar
- 1 tsp. vanilla
Preparation
Step 1
Caramelize 1/2 cup sugar in heavy skillet. Do not stir while browning. Watch closely. Cook milk, sugar, cornstarch and egg yolks until thickened while the sugar is melting and browning. When sugar is caramelized, add cooked pudding, stir and mix until thick and smooth. Pour into baked pie shell. Top with meringue made with the 4 egg whites. Brown in hot oven.
