Chocolate Zucchini Bread

Ingredients

  • 3 eggs
  • 1 1/2 cups sugar
  • 1 cup vegetable oil
  • 1 tbsp. unsweetened cocoa
  • 1 tsp Expresso powder
  • 1 tbsp. vanilla extract
  • 2 cups grated zucchini
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tbsp. cinnamon
  • 1 (3 oz) box instant chocolate pudding mix
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts
  • 1 1/2 cups chocolate chips-divided

Preparation

Step 1

Preheat oven to 350 degrees.

In a large mixing bowl beat the eggs, sugar, oil, and vanilla until light in color. Fold in the zucchini.

Combine the flour, cocoa, expresso powder, salt, baking soda, baking powder, cinnamon, and pudding mix.

Add to the egg mixture and mix well. Fold in the coconut, nuts, and 1/2 cup of chocolate chips.

Sprinkle 1/2 cup of chocolate chips on top of 'each' bread.

Pour into two greased loaf pans.

Bake for 50-55 minutes or until a wooden tooth pick inserted into the center comes out clean.

Cool on a rack for 10 minutes; remove from the pans and cool completely.
