Ingredients
- 1/3 cup yellow lentil.
- 1 medium onion,quartered.
- 1 medium tomato ,quartered.
- 1 large carrot.
- a few springs of fresh parsley chopped.
- 1 1/2 teaspoon salt.
- 4 cups water.
- ground cumin & pepper to taste.
- lemon quartered to serve
Preparation
Step 1
1)Add lentil and 2 cups of the water to pan , bring to boil, simmer, uncovered, until tender about 20 minutes.
2Add spices,onion,tomato,carrot and 1 cup water,simmer for 20 minutes.
3)Blend or process the soup adding last cup of water until smooth.
4)Return soup to pan ,add the parsley & cumin, simmer for 15 minutes.
5)Serve it with fresh lemon juice.
