Banana or Coconut Pie

Ingredients

  • Meringue:
  • 2 c. milk
  • Yolk of 2 eggs
  • 2 T. cornstarch
  • 3/4 c. sugar
  • 2/3 c. coconut (or bananas)
  • Vanilla
  • Baked pie crust
  • 3 egg whites
  • Dash salt

Preparation

Step 1

Cook milk, egg yolks, cornstarch and sugar in top of double boiler until thick. Pour over sliced bananas in baked crust or add coconut to custard and pour in crust. Cover with meringue. Bake in 325 degree oven for 15 to 20 minutes. Be sure meringue touches pastry all around.
Meringue: Beat until eggs are stiff and fluffy, but still cling to bowl. Add 6 tablespoons sugar gradually and beat until eggs stand in peaks.
