Ingredients
- 3 c sugar
- 1-1/2 c whole milk
- 2 cinnamon sticks
- 6 T unsalted butter
- 1/2 c + 1 T unsweetened cocoa powder
- 1-1/2 t sea salt
- 1 t chipotle chili powder
- 1/2 t cayenne pepper
- 3 oz. semisweet chocolate
- 1-1/2 t vanilla
Preparation
Step 1
Combine first four ingredients in large sauce pan and whisk vigorously over medium heat for 5 minutes until completely smooth and sugar is dissolved.
Add next 6 ingredients and stir until chocolate is melted and incorporated; scraping the sides of the bowl and bottom of pan as necessary to avoid burning the chocolate. The sauce will be silky and shiny when ready. Discard Cinnamon sticks.
Taste and adjust seasoning as desired. Let cool for 10 minutes. Serve over ice cream or store for up to 2 weeks in fridge.
