Ingredients

  • 1/2 yellow onion
  • 1 tsp garlic
  • 3 carrots
  • 2 turnips
  • 1/4 small cabbage
  • 4 small bok choy heads
  • 3 Tbsp sesame oil, divided
  • 2 eggs
  • 1/2 cup frozen peas
  • 4 cups cooked brown rice, at least 1 day old
  • 2 Tbsp soy sauce
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Preparation

Step 1

1. Dice onion, peel carrots and turnips, and dice. Shred the cabbage. Chop off the bottoms of bok choy, thinly slice.

2. In a large skillet, heat 2 Tbsp sesame oil. Sauté carrots, onions and turnips for 2 minutes. Add eggs and scramble for 1 minute. Add garlic, peas, rice, soy sauce, 1Tbsp sesame oil, salt and pepper. Heat and serve.
