Hobo Hash

Ingredients

  • 2 T. margarine
  • 1/2 lb. diced ham
  • 1/2 sm. onion, diced
  • 2 T. sour cream
  • 2 lg. potatoes, baked and diced
  • 1 c. broccoli florets
  • 8 oz. shredded cheddar (I only use 4 oz.)

Preparation

Step 1

Melt margarine in large skillet or Dutch oven. Add ham, onion, potatoes and broccoli, stirring until potatoes are browned. Reduce heat to low and sprinkle cheese over all. Heat until cheese all melts. Remove from heat and dish onto serving plates. Top each serving with 1 tablespoon sour cream.
