Lizzie's Black-Eyed Peas and Rice

This recipe is as delicious as it is easy and affordable.

Ingredients

  • 1 T olive oil
  • 2 T balsamic vinegar
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 2 garlic cloves, minced
  • 30 oz. black-eyed peas (canned or cooked) with juice
  • 1/4 c. water
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 green onions, thinly sliced
  • 1 c. cooked rice
  • shredded white cheddar
  • Hot sauce to taste

Preparation

Step 1

Saute onion, bell pepper, and garlic in olive oil and vinegar
Stir in black-eyed pease, water, salt, and pepper
Cook 10 minutes
Stir in rice
Let stand in fridge for 24 hours
Heat and serve with a garnish of green onions, cheese, and hot sauce
