- 1 1/2 cups egg Whites
- 1 1/8 cups cake flour
- 1 3/4 cups sugar divided
- 1/2 tsp. salt
- 1 1/2 tsp. cream of tartar
- 1 tsp. vanilla
- Scant almond extract

Preparation
Step 1
Sift flour & ¾ cup sugar 5 times. Beat whites & salt until foamy; add cream of tartar & beat until stiff peaks form. Sprinkle 1 cup sugar on medium for 1 minute. Turn to low and add extracts, quickly add flour/sugar mixture. Place in an angel food cake pan and bake at 375 for 35 minutes. Invert for 2 hours before removing.
