Puffy Baked Omelet Roll

Ingredients

  • optional fillings:
  • 10 eggs
  • 3/4 cup milk
  • 3/4 cup water
  • 1/2 cup flour
  • 3/4 tsp. salt
  • pepper to taste
  • 10 oz. mixed peppers, sauteed
  • 8 oz. diced onions, sauteed

Preparation

Step 1

Preheat oven to 375 degrees F. Grease a 10 X 15 inch baking pan. Cut a piece of parchment to line bottom of pan and extend up short ends, spray parchment once you have put it in the pan.

In a blender, combine eggs, milk, water flour, salt and pepper; cover and process until smooth. Pour into prepared baking pan.

Bake in preheated oven until set, about 10 minutes. Sprinkle with cheese and top with desired fillings.

Carefully loosen edges of omelet from pan. Starting from the short edge of the pan, carefully roll up omelet. Place omelet seam side down on a serving plate and cut into 10 equal sized pieces.
