Ingredients
- 1 cup thinly sliced, halved onion (1 large)
- 1 cup shredded carrots
- 1 1/2 teaspoons lemon pepper
- 1/4 teaspoon crushed red pepper flakes
- 1 can (18 oz) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce
- 6 oz frozen cooked deveined peeled small shrimp
- 1/2 cup chopped green and ripe olives, if desired
Preparation
Step 1
In 10-inch skillet, heat 1 tablespoon vegetable oil over medium-high heat until hot. Cook onion and carrots in oil 3 to 5 minutes or until softened. Sprinkle with lemon pepper and pepper flakes. Pour cooking sauce over all. Cover and steam 10 minutes, adding frozen shrimp last 3 minutes. Top with olives.
Serve sauce with shrimp. Sauce is also great over rice.
