VINAIGRETTE****Low Fat Greek Vinaigrette

14/03/16 - VG. Had with Greek Chicken Salad in a Jar. It seems too runny but it's very flavourful and dresses the salad well.

Ingredients

  • 4 tablespoons fresh lemon juice
  • 4 tablespoons red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried marjoram (optional - didn't have)
  • 1 teaspoon honey
  • 1 teaspoon dijon
  • 1 ⁄4 teaspoon black pepper
  • 1 garlic clove, minced
  • 1 ⁄4 cup extra-virgin olive oil
  • 1 ⁄4 cup fat-free chicken broth (use the stock, if available)

Combine all ingredients in a mason jar and mix well.
