Ingredients

    cup sliced carrots 1 egg beaten

  • 1

    cup sliced celery 2 tbsp milk

  • 1/2

    cup green onion 1 cup soft breadcrumbs

  • 1/4

    cup parsley 1/4 cup grated parmesan

  • 3

    beef bouillon cubes 1 lb ground meat

  • 4 1/2

    oz ditalini

  • 1

    15 oz can diced tomato 1 cup chopped fresh spinach

  • 2

    qts water

  • 3

    tsp salt

  • 1/2

    tsp pepper

Directions

In a soup pot combine first 6 ingredients, 2 tsp salt, 1/4 tsp pepper and 2 qts water. Bring to a boil. Cover and simmer 20 mins. Mix remaining salt and pepper, egg, milk and breadcrumbs in bowl. Let stand few mins. Add cheese and beef, mix well. Shape into about 36 balls, add to soup and simmer covered for 15 mins. Bring to boil, add pasta. Simmer uncovered about 5 mins. Add spinach and remove from heat
