Cocoa Bomb Chili

Ingredients

  • 2 lb ground beef (or beef chunks, turkey)
  • 1 medium sweet potato
  • 2 bell peppers, can also use hot peppers, your choice
  • 1 14.5 oz can of fire roasted tomatoes
  • 2 small cans of green chilies
  • 1 medium onion of choice
  • broth or water, about 2-3 cups
  • 1 can of black beans (optional)
  • Spices
  • 1 tbsp chili powder (if spicy, use less)
  • 1 tbsp cocoa powder
  • 1 tbsp paprika (smoked or sweet)
  • 1/2 tbsp cumin
  • 1/2 tbsp garlic or 2 garlic cloves
  • 1/2 - 1 tsp cayenne (depending on your peppers and your chili powder)
  • Salt and pepper to taste
  • Cheese of choice to top, we love adding goat cheese
  • Optional - tortilla chips for crunch, scallions

Preparation

Step 1

1. Dice onion and cook over medium heat in a Dutch oven with a little bit of oil or butter
2. Add ground beef and spices and brown well.
3. While meat is browning, chop sweet potatoes and peppers.
4. Add sweet potatoes, peppers, tomatoes, chilies, and beans (if using).
5. Mix well, then add broth or water until it just covers the contents of the pot.
6. Reduce heat and simmer for 30-60 minutes.
7. Service piping hot with goat cheese crumbled on top.
