Ingredients
- 8 oz wheat
- 2 1/2 2 1/2 cups parsley; finely chopped
- 1/2 cup onion; finely chopped
- 2 cups tomatoes; finely chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 to 3 cups lemon juice
- 3/4 cup oil
- mint; optional
Preparation
Step 1
Rinse and drain wheat; add all ingredients, mix well. Let set one hour before serving. Salad may be kept in refrigerator for several days.
