Stewed Calamari with Rice

This is my mom's traditional Greek recipe which can also be made as a chicken version. If opting for the latter, use chicken thighs and drumsticks.

Ingredients
- 1 lb. frozen squid (cleaned), thawed
- 1 onion, finely chopped
- 1/2 tsp. cinnamon
- 1/4 tsp. ground cloves
- 1/4 tsp. ground allspice
- 2 cups water
- 1 tbsp. tomato paste
- 1/4 cup olive oil
- Salt and pepper to taste
Preparation
Step 1
1. Wash squid well under cold water and cut up into bite size pieces. Set aside.
2. Heat olive oil in medium size pot over medium-high heat. Add onion and saute until translucent. Add squid and saute for 2 minutes.
3. Dissolve tomato paste in 1 cup of warm water and add to the pot. Add remaining cup of water as well. Add in the cinnamon, cloves and allspice and stir well.
4. Simmer the sauce until the squid is tender and the sauce has thickened (approximately 20 minutes). Season with salt and pepper to taste.
5. Serve hot over cooked white rice.
