Lemon Squares

Ingredients
- Crust:
- 2 cups all purpose flour
- 1/2 cup icing sugar, sifted
- pinch of salt
- 1 cup butter at room temperature
- Filling:
- 2 cups sugar
- 1/4 cup plus 2 tbsp. all purpose flour
- 4 large eggs
- 6 tbsp fresh lemon juice ( I use an extra tbsp or 2)
- 2 tbsp finely grated lemon zest
- 1/4 cup icing sugar, sifted

Step 1
Grease and flour a 9 x 12 baking dish.
Crust:
Combine the flour, icing sugar and pinch of salt in a medium bowl. Using a pastry blender or 2 knives cut in the butter until mixture is crumbly. With fingertips, press the crust mixture evenly into prepared pan. Bake for 20 minutes or until crust is golden.
Place on rack to cool. Leave oven on.
Filling:
Place the sugar, flour, eggs and lemon juice in a medium bowl.
Using an electric mixer set at the lowest speed, combine the ingredients for 30 seconds. Stir in the lemon zest. Pour filling on top of baked crust. Bake for 30 minutes or until tester comes out clean.
Place on rack to cool. Dust with icing sugar and cut into squares.
Freezes well (but I’d rather die).
