Black Bean Chili with Rice

Ingredients
- 1 # lean ground beef
- 3 C or 3 cans drained black beans
- 1 C diced green pepper1 C chopped onion
- 1 C diced carrots
- 1 T chili powder
- 2 garlic cloves, minced
- 2 bay leaves
- 1/2 t pepper
- 3 C vegetable or tomato juice
- 1 t cumin
- 1 can corn
- 4 C hot cooked rice
- chips, tomatoes, cilantro and sour cream to garnish as desired

Preparation
Step 1
Brown beef. Add all ingredients except rice. Simmer 20-25 min. Remove bay leaves. Serve over hot rice with chips on side. Top with tomatoes, cilantro and sour cream.
