Ingredients
- Satay Sauce:
- 1 1/2 lbs boneless, skinless chicken thighs
- 8 bamboo skewers, soaked
- Salt, sprinkle
- Pepper, sprinkle
- 2 tsp cooking oil
- 1/3 cup finely chopped onion
- 1 garlic clove, minced
- 1/2 tsp ground cumin
- 3/4 cup prepared chicken broth
- 1/2 cup peanut butter
- 3 T water
- 2 T plum sauce
- 1 T chili sauce
- 2 tsp soy sauce
Preparation
Step 1
Cut chicken crosswise into 1 inch wide strips. Thread, accordion-style onto skewers, leaving about 2 inches on 1 end as handle
Sprinkle with salt and pepper. Preheat electric grill for 5 minutes or gas bbq to medium. Cook skewers on greased grill for about 20 minutes, turning occasionally, until chicken is lightly browned and no longer pink inside. Keep warm.
Satay Sauce: Heat cooking oil in medium saucepan on medium. Add onion, garlic and cumin. Cook for about 3 mintues, stirring occasionally, until onion is softened.
Add remaining 6 ingredients. Stir until well combined. Cook for 3 minutes, stirring often, until thickened. Pour into small dipping bowl. Serve with skewers.
