Ingredients
- 4 oz mozzarella cheese, sliced
- 1/2 cup flour
- 2 eggs, beaten
- 2 T fresh basil, coarsely chopped
- 1/2 cup Italian-style bread crumbs
- 4 boneless chicken cutlets (1 1/4#)
- 1 tsp rosemary/sun-dried tomato seasoning
- 1/4 canola oil
- spaghetti
- pasta sauce
Preparation
Step 1
1. Place flour in bowl, beaten eggs in another.
2. Chop basil and place in third bowl; stir in bread crumbs
3. Season chicken on both sides with the seasoning. Dredge chicken in flour, coating both sides; dip in egg, finally coat with bread crumb mixture pressing in with finger tips
4. Preheat oil in large pan on med. for 2-3 min. Add chicken; cook 2-3 min. until browned. Transfer chicken to baking sheet and top with cheese; bake 4-5 min. or until cheese melts and chicken is done
5. Cook pasta; place on plates with sauce, chicken on top
