Chicken Parmesan - Dump and Go

Ingredients

  • 6 oz. uncooked penne pasta
  • 12 oz. pasta sauce
  • 1 1/2 C. chicken broth
  • 2 large uncooked chicken breast, cubed
  • 1 tsp. dried basil
  • 1/4 tsp. each salt and pepper
  • 1 C. shredded mozzarella cheese
  • 1/3 C. seasoned bread crumbs
  • 1/4 C. grated Parmesan cheese

Preparation

Step 1

Preheat oven to 425°.

In an 8x8 baking dish, sprayed with cooking spray, put the uncooked pasta in the bottom.

Top with the pasta sauce and broth.

Toss the chicken with the basil, salt and pepper and spread over the dish, pressing to make sure it is submerged in the broth.

Top with 1/2 C. of the mozzarella cheese.

Cover tightly with tinfoil and bake for 40 minutes.

Uncover and sprinkle the breadcrumbs over the dish along with the remaining mozzarella cheese and the Parmesan cheese.

Return, uncovered, for 7-8 minutes until cheese is melted and begins to brown.
