Ingredients

    pkgs (3oz each) soft lady fingers, split length wise

  • 2

    lg egg whites

  • 1 1/3

    c sugar

  • 1/4

    c water

  • 2

    tsp light corn syrup

  • 3/4

    c nonfat cottage cheese

  • 1/2

    c mascarpone cheese

  • 1/2

    c light cream cheese (Neufchâtel)

  • 3

    tbsp brandy or rum, divided

  • 2

    tsp vanilla extract

  • 3/4

    c strong brewed coffee

  • 2

    tsp unsweetened coca

  • 1/2

    sq (1/2oz) semisweet choc, grated

Directions

Heat oven 375 arrange lady fingers, cut sides up, in a single layer on lg cookie sheet. Bake until lightly toasted 5 min, set aside. Combine egg white, sugar,water and corn syrup in top of dble boiler over simmering water. Beat constantly with hand mixer at med speed 3 min increase speed to high (remove from heat while beating)and beat until soft peaks firm. Cool completely. Cottage cheese in over bowl, press gently to remove excess liquid. Purée cottage cheese in blender or food processor until smooth. Add mascarpone cheese, cream cheese, 1 tbsp brandy/rum and vanilla. Pulse to blend. Fold 1 cup cheese mixture into the cooled egg white mixture, fold in remaining cheese. Combine coffee and remaining 2 tbsp brandy in cup brush over lady fingers Arrange 1/3 of the asked fingers in bottom of 2 1/2 qt serving dish. Spoon on 1/3 of the cheese filling. Repeat layering 2 more times, smoothing the filling on top sift over top. Sprinkle with grated chic, cover and refrigerate 6 hours or overnight. Makes 12 servings
