Berry Cheesecake Trifle

I combined several recipes to make my own version of this berry cheesecake trifle. You can use several kinds of berries, or just one. TOTALLY up to you. The pic and URL is from one of the original recipes I "tweaked".

Ingredients

  • 2 Boxes Twinkies (10 per box)
  • 1 8 oz package Cream cheese
  • 1 1/2 cups Milk
  • 1 package White Chocolate instant pudding
  • 2 jars lemon curd
  • 2 C Heavy whipping cream
  • 5 C berries, thickly sliced (Can use one or several different kinds. I used strawberries)
  • 1/4 C sugar
  • Whole berries to garnish top

Preparation

Step 1

Lay out 6 1/2 Twinkies at the bottom of a trifle bowl covering the entire bottom. Spread 1/2 jar lemon curd on Twinkies. IF USING STRAWBERRIES, SLIGHTLY "mash" about half the berries with 1/4 C sugar. If using other berries, DO NOT MASH and exclude 1/4 cup sugar. Stir in the rest of your sliced berries and spread 1/2 on Twinkies.
In mixing bowl, beat one package of the cream cheese with a mixer until creamy. Continue mixing over medium low speed adding pudding mix then slowly add 1 1/2 cups milk. Beat till fully mixed/fluffy. Turn off mixer and stir in 1 cup whipped HEAVY whipping cream. Spoon 1/2 the cheesecake mixture on top of the strawberry layer in the trifle bowl.

REPEAT process by layering Twinkies on top of the berry layer, etc. etc. My LAST layer was Twinkies sliced in half lengthwise,(I had one left) topped with lemon curd and remaining cup of whipped heavy cream but NO berries as my bowl was plenty full. Garnish with a couple whole berries. Chill minimum of several hours and serve.

Top with one cup of whipped HEAVY whipping cream, beat with a couple TBS of sugar and garnish with whole berries.
