Arroz Con Pollo

This is the best arroz con pollo recipe I have found!

Ingredients

  • 1 broiler /fryer chicken, about 5 lbs., cut into eight pieces ( discard giblets and wings)
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all purpose flour
  • 3 Tablespoons vegetable oil
  • 1 small onion, diced
  • 3 cloves garlic, sliced
  • 1 cup white rice, uncooked
  • 1 can 14.5 oz chicken broth
  • 1 packet Goya Sazon con Azafrain
  • 1 box 10 oz. frozen peas

Preparation

Step 1

1. Discard chicken skin. Season with 1/4 t. Salt and 1/8 t. Pepper. Toss in flour.
2. Heat 1 T. Of the oil in a skillet over med- high heat. Brown half of the chicken pieces about 3 mins. Transfer to a plate. Add another T. Oil. Brown other half
3. Reduce heat to medium, add another T. Oil and onion to pan, cook 3 mins. Add garlic cook another min.Stir in rice, broth, seasoning packet, remaining 1/2 t, salt and 1/8 t. Pepper. heat to high and bring to a boil.
4. Stir in peas, chicken and juices. Cover, reduce heat, simmer20-25 mins. Let stand 5 mins. Before serving.
