Slow Cooker Garlic Mashed Potatoes

Ingredients

  • 3 lbs. red potatoes, chopped
  • 1/4 cup unsalted butter
  • 4 cloves garlic, crushed and peeled
  • salt and pepper to taste
  • 1/2 cup sour cream
  • 1/3 cup freshly grated parmesan
  • 2 Tbsp milk
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/4 tsp nutmeg
  • 2 Tbsp chopped fresh chives

Preparation

Step 1

Lightly coat inside of slow cooker with non stick spray. Place potatoes, butter, garlic and 1/4 cup water into slow cooker; season with salt and pepper to taste. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours, or until tender.

Add sour cream, Parmesan, milk, thyme, oregano, basil and nutmeg. Using an electric mixer fitted with the paddle attachment, blend potatoes until light and fluffy, about 2-3 minutes. If the mixture is too thick, add more milk as needed until desired consistency is reached.

Serve immediately, garnished with chives, if desired.
