Goat Cheese Stuffed Tomatoes (low FODMAP)

Ingredients

  • 12 Campari tomatoes
  • 1 1/2 teaspoons extra virgin olive oil
  • 6 ounces fresh goat cheese
  • 1 1/2 teaspoon chopped fresh oregano
  • Sea salt and coarse ground pepper, to taste

Preparation

Step 1

Heat broiler.
Wash tomatoes and pat dry.
Place tomatoes, stem side up, on a rimmed baking sheet and brush with oil.
Broil just until skins blister, 1 minute.
In a small bowl, lightly mash goat cheese and stir in oregano, salt and pepper.
Cut the top off of the tomato (approximately ⅛ inch) and gently remove the pulp.
Fill each tomato with the cheese mixture.
Replace the tops.
Garnish with fresh herbs (oregano or basil).
