Ingredients
- 5 tablespoons Buttermilk Herb dressing OR
- 4 tablespoons Yogurt Dressing - Mediterranean Fresh
- 20 cherry tomatoes, halved
- 2 baby cucumbers, sliced
- 1/4 avocado, peeled and chopped
- 4 tablespoons canned black beans
- 4 tablespoons frozen corn, thawed
- 2 slices red onion, chopped
- 4 ounces chopped poached chicken
- 1 - 2 tablespoons barbecue sauce of choice
- 4 cups chopped romaine
Preparation
Step 1
Divide all ingredients between two mason jars, in order listed. Start with ranch dressing then layer tomatoes, cucumbers, avocado, beans, corn, onion, chicken (tossed with BBQ sauce - keep it pretty dry) and end with romaine. Store in the refrigerator for up to 5-6 days.
